Halloumi, Cucumber & Mango Chutney Sandwich

Ingredients
  • 1tbsp Roza’s Mango Chilli & Coconut Chutney
  • 1 Lebanese Cucumber
  • 2 thickly cut slices of sourdough
  • 1/2block halloumi (approx 6 slices)
  • salt & pepper
Instructions
  1. With a vegetable peeler, shave lengths of cucumber from four sides, discarding the seed core
  2. In a non-stick frypan on med-high, grill halloumi slices until brown on both sides
  3. Assemble the sandwich with chutney, cucumber, salt and pepper, and halloumi
  4. Enjoy!
Recipe Notes
This sandwich is also fantastic when toasted – adding the cucumber after grilling.
